Makala's story

​As a proud holder of a culinary silver medal, Makala Poole never expected to land a career in hospitality. Makala recently competed in the state finals of the 2013 Australian TAFE Culinary Trophy proving she has the skills to take her to the top.
 
Makala started working as a kitchen hand at the Victorian Tavern Hotel in Gisborne whilst at secondary school. Immersed in a commercial kitchen, admiring the chefs prepare meals with flair amongst the fast paced environment; she was motivated to study hospitality and begin her career in the trade as an apprentice. “I really fell into it and the passion grew from there” Makala says.
 
Makala speaks passionately about her studies, preparing food for others and being challenged daily. Working split shifts in her apprenticeship, the days are long and with extra-curricular activities and competitions on top of that. She has her work cut out for her now.
Makala chose Bendigo TAFE because of the teachers; she heard good reports about the teachers and their wealth of knowledge in the industry.
 
Although Makala lives in Bacchus Marsh, she enjoys the drive to Bendigo “it’s worth the travel” she says.
“Bendigo TAFE has teachers with real industry experience. Renzo Panozzo is really helpful as he is still in the industry working in the day to day environment.” Makala says
Renzo is currently the head chef at the Bendigo Art Gallery café.
 
“The most positive part is people’s reaction to the food you send out. Seeing the enjoyment they have from your food, that’s what it is all about. One customer said to me, ‘your desserts are amazing’. That made my day, that’s the best part.” Makala says
 
Makala will be volunteering at the Bendigo Food & Wine Expo on 22-24 November 2014, so keep an eye out for her. You may even get to try some of her creations.
 
And Makala’s advice if you are considering studying hospitality and commercial cookery is
“Definitely consider hospitality if you are not afraid of hard work. Put in 100% to succeed and the rewards will follow”.
